Beyond organic

Wines made through our exclusive EOIB method — free of agrochemicals, rooted in biodiversity and crafted for purity and balance.

  • No chemical fertilizers, no pesticides and no herbicides
  • Biofertilizers, biofungicides and biopesticides made on the estate from vermicompost and its leachates
  • Terraced vineyards to prevent erosion and conserve the soil

Our story

Our Founder

Dovinto started in 2010 by an oceanologist specialized in biology, driven by a deep passion for wine and a desire to create something he could confidently and safely enjoy himself — a truly healthy wine.

With a scientific foundation rooted in ecosystem balance, he approached viticulture differently. His extensive knowledge comes not only from years of hands-on vineyard development, but also from formal studies in oenology, advanced viticulture practices, and the extraction of polyphenols in grapes, including participation in the Unified Wine & Grape Symposium in Sacramento.

Frequently asked questions

Do I need a reservation?

Yes. Please book at least one day ahead so we can hold your spot and prepare your visit.

How do I pay, and in which currency?

You pay online by card, in Mexican pesos. If your card is from the US, your bank converts it to dollars. Every price shows the approximate dollar amount.

Are visits available in English?

Yes. We host visits in English and Spanish. You choose the language when you book.

Can children come?

Yes. Children under 10 are free on tours, and there is a special price for guests who do not drink alcohol.

Can I cancel and get a refund?

No. All bookings are final: if you cancel or do not show up, your payment is not returned. If you have questions before booking, please call us.

Where are you and how do I get there?

We are at Transpeninsular Highway km 77.5, Santo Tomás, south of Ensenada, Baja California. We send the exact location with your confirmation.
